These cute breakfast treats are a bite-size twist on traditional Pigs in a Blanket. Using a baking mix like Bisquick, insert precooked sausages in a mini muffin pan filled with batter. Then heat up some syrup for dipping your Mini Pigs in a Blanket.

Ingredients

  • 8 precooked frozen sausages
  • 1 cup baking mix (we used Bisquick®)
  • ½ cup milk
  • 1 egg
  • Pancake syrup
  • Nonstick cooking spray

Directions

  1. Preheat oven to 425°F.
  2. Spray 2, 12-cup mini-muffin pans with nonstick spray.
  3. Arrange sausages on a microwave-safe plate. Cover and microwave for 2 minutes at 100% power. Set aside.
  4. Mix baking mix, milk and egg. Whisk until combined.
  5. Add approximately ½ Tbsp. batter into each muffin cup (about ½ full).
  6. Cut cooked sausages into 3 equal pieces. Place a sausage piece in the centre of each muffin cup.
  7. Bake for 8 to 10 minutes or until cooked through.
  8. Serve with warmed syrup.
