Valentine’s Day Cupcake Sundaes
Baking cupcakes in ice cream cones and decorating them like sundaes gives them a retro diner twist. And it gives you an excuse to add a unique, creative touch to each one.

Ingredients
- Your favourite cake recipe (or mix)
- Your favourite frosting recipe (or mix)
- 24 Flat-bottomed ice cream cones
- Pink and red sprinkles
- Red decorating gel
- For “cherries,” use cherry sourballs—poke with a toothpick and add a red licorice “stem”
- Paper straws (cut in half for cuteness)
Directions
- Prepare the batter as directed.
- Pour the batter into the cones, filling them about half-way.
- Bake as directed for cupcakes and allow to cool completely. Pro tip: Bake in muffin tins or cut holes in an aluminum pan and turn it upside down on a sheet pan to hold the cones in place.
- Pipe generous swirls of buttercream frosting on top to look like soft serve ice cream.
- Decorate each as you would an ice-cream sundae—with sprinkles, drizzles of decorating gel, “cherries,” and straws—or make a “Cupcake Sundae Bar” and let kids top their own.
